			<content:encoded><![CDATA[<p>There-s no sense trying to relax and get away from it all if your vacation spot is full of people, traffic and industrial noises. For vacationers that need peace and tranquility to help recharge their batteries, Halki offers an excellent island retreat. </p>
<p>Away from the pressures of mainland Greece, Halti contains only one village named Nimporino. The closest neighbor is the island of Rhodes. After traveling to Rhodes, vacationers take a scenic ferry boat to Halki. Travel around the 28<span id="more-45"></span> square kilometer island is done by foot, by donkey or by boat. Only a handful of cars are allowed on the island in order to keep it pristine and tranquil.</p>
<p>Halki offers excellent beaches, gentle mountain slopes and about 6000 feral goats, which is several times the human population of about 250. Halki-s former village, Chorio, features an abandoned Midaeval castle and a Byzantine church. The locals make their living through tourism and fishing. </p>
<p>Travelers will be assured of a good night sleep because discos and loud night life are forbidden on Halki. But if feeling in a party mood, travelers can take the ferry to Rhodes. Be sure to bring cash, traveler-s checks or credit cards, as there is only one ATM machine on the island and no banks.</p>

With only one inhabited village and one deserted one, this island is the perfect place to leave your worries behind and truly get away from it all. </p>
<p>The inhabited village of Nimborio serves as the islands capital, has a beautiful enclosed bay and neo-classical architecture, and a beautiful Byzantine Church. The islands single village offers shops and taverns, but no disco&#8217;s. </p>
<p>If you are looking for something more wild you can<span id="more-37"></span> walk along the islands one paved road or hike off this beaten path and explore the ruins of the old village of Chroio. The old village is centered around a hill which has the ruins of an ancient Crusader&#8217;s castle. The abandoned homes and fortress provide interesting architecture and history for you to explore. </p>
<p>Beekeeping is a cottage industry on the island, where bees are raised for honey and wax. Oregano and white marjoram grow wild, and are picked by the islanders. Many small beaches are invitingly lapped by turquoise waters. The island is home to nearly 6000 goats, 14 types of butterflies and 40 different kinds of birds.</p>

However, its sunny, dreamy beaches can take romance to the next level. Walking through the streets and exploring its typical taverns is an ideal experience for a quiet vacation. Optimal for couples or families who prefer to stay away from multitudes of tourists that flock other nearby islands.</p>
<p>Without a doubt, Halki is an earthly paradise. Its sun, the always blue sea, the beauty of the sunrises and no less spectacular sunsets,<span id="more-36"></span> make out of this a magical place. Seductive and charming; the perfect scenery to fall in love. </p>
<p>One of the most captivating places to visit in Halki is the ancient city of Chorio. Abandoned in the early nineteenth century it is today partially demolished. Located at the top of the slopes of Mount Kastro, it is undoubtedly worth a visit. There is the church of Panagia, where every August 14th they celebrate the festival of the Virgin Mary, including typical dances and a deployment of Greek traditions.</p>
<p>Ascending a little more, you get to the ruins of the castle, which gives its name to the hill. This is the medieval castle of the Knights of St. John, fifteen minutes from Chorio. It was built in the place that was formerly Acropolis.</p>
<p>Nimborios is the name of the port and the only village of Halki. Its views are picturesque mainly due to the Venetian style, with red roofs. The settlement was built with an amphitheater around the port, and one of its most notable landmarks is the clock tower, which is located opposite the town hall; visible even from a distance.</p>
<p>The main church of Nimborios is the St. Nicolas church, built in 1861. Its tower is the most broad of the Dodecanese and has magnificent mosaics. There is also a museum that exhibits costumes, icons, silver plates and bibles donated by other churches of the island. You will love it there, and want to visit more often.</p>

What?</em> You ask. Yep, Tarpon Springs, Florida, the one US city most noted as having the highest percentage of Greek-Americans than any other in the country; and with that demographic comes amenities and attractions that are truly representative of that culture. The reason for the dense Greek population can be attributed to the city&#8217;s proximity to the coast since its sponge industry (dating back to the mid-1800s) reached its peak thanks in part to the experienced divers from Greece who were brought over to help the Gulf of Mexico economy flourish. As a matter of fact, at one point in Florida&#8217;s history it was its sponge industry that was considered the state&#8217;s largest  even surpassing its citrus production. The area (near Tampa Bay) is now home to a plethora of Greek restaurants and ethnic shopping experiences, including the Halki Greek Market offering some of the country&#8217;s finest natural olive oils and goat&#8217;s milk based soaps. Also of note is the Viking Fleet which offers half, full, and multi-day fishing trips so you can experience the waters the same way the<span id="more-33"></span> Greek fishermen may have hundreds of years ago. And don&#8217;t forget to stop in awe at some of the beautiful <a href="http://www.goarch.org/">Greek Orthodox</a> churches in the area. As much as the city thanks it sponging heritage, it is equally embracing of its tourism industry, and there are several nationally-known hotel chains in the immediate vicinity to assist you in your exploration of this lovely jewel on the Gulf Coast of Florida.</p>

			<content:encoded><![CDATA[<p>If you&#8217;ve already been fortunate enough to visit the Mediterranean you may have sampled the delightful Greek soup known as Avgolemono. It&#8217;s rich and warming to the soul and deliciously fragrant without being heavy or overly filling. If you enjoyed it as much as we did while visiting, we&#8217;re hoping you&#8217;ll be pleased to try out this recipe that captures all the goodness you experienced on your trip! <strong>Ingredients</strong>1 chicken cut in pieces6 cups of water and 6 cups chicken stock2 cups orzo (or rice if you would like to substitute)sea saltground pepper1/4 teaspoon Greek oregano3 tablespoons extra virgin olive oil2 eggs, separatedjuice from 2 fresh lemons 1 tablespoon of water<strong>Directions</strong>1.Place the chicken in a large stock pot and add water and stock. Bring to a full boil skimming off any foam that rises to the top. When the foam stops, reduce heat, cover the soup and simmer until the chicken meat is falling off the bone (about two hours).2.Remove the chicken from the pot and set aside. Strain the broth, return to the pot, and bring to a boil. Add the orzo (or rice), salt, pepper, oregano, and olive oil. 3.Reduce heat, and simmer until the orzo (or rice) is done, approximately 20 minutes. Remove from the heat.4.While the orzo (or rice) is cooking, bone the chicken and cut the meat into pieces.5.In a mixing bowl, beat or whisk the egg whites until foamy. 6.Beat in egg yolks, water, and lemon juice. Fill a measuring cup with hot soup broth and add liquid to eggs slowly, beating /whisking continuously. NOTE: If the hot liquid is added too quickly to the eggs, the mixture will curdle  be patient. 7.When the mix is fully blended, stir the soup and pour in the egg-lemon mixture slowly. 8.Shake the pot gently to distribute. Do not stir.9.Add the chicken to the soup and serve with a little sprinkled black pepper. Serves 8-10.10.Enjoy!</p>
